Creamy, but dairy-free, this comforting Low FODMAP Lemon Chicken and Rice is a delicious meal-in-one-skillet.
- Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and sear for 2 minutes each side. Remove chicken from pan and set aside.
- To now empty pan, add rice, chicken broth, lemon juice and Italian seasoning. Stir to mix. Place chicken on top of rice mixture. Cover and cook on medium heat for 20 minutes or until liquid is dissolved. Garnish with optional parsley and serve.
