Although I don’t eat much bread anymore (personal preference), baking bread is in my blood. Up until several ago before moving into assisted living, my grandma baked homemade bread and buns almost daily. Before finding out gluten-containing foods were an issue for me, I loved having a slice (or two) of her freshly baked bread. Luckily, this Low FODMAP Crusty Bread allows me to get a similar homemade bread fix every once-in-a-while.

Low Fodmap Crusty Bread

Ingredients

  • 3 cups Bob’s Red Mill 1:1 Gluten-Free All-Purpose Flour + extra for dusting
  • 1 ½ tsp. instant yeast
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1 ½ cups warm water (100°F)

Instructions

  1. In a stand-up mixer, whisk together flour, yeast, sugar, and salt. Add water and mix until consistency is very smooth. Cover the bowl with a clean towel and allow to sit at room temperature for 6 hours.
  2. When ready to bake, preheat oven to 450°F. Place Dutch oven in the oven to preheat for 30 minutes. Place dough ball on parchment paper and lightly dust with gluten-free flour. Slash ½-inch deep cuts into the top of the dough ball with a wet serrated knife. Transfer dough ball on parchment paper to preheated Dutch oven. Cover and bake for 30 minutes. Uncover and bake for 15 minutes more or until crust is golden brown. Cool completely before slicing and serving.

  1. hi – where i am from, a dutch oven is a stew pot with a lid, that usually sits on the stove, so i was wondering if you had photos of yours and would describe whether it is gas or electric. is it something like an electric slow cooker? thanks.

    1. Hi Joyce! I just realized that my directions got a little jumbled transferring them to blog. Sorry about that! The 2nd direction should read:

      When ready to bake, preheat oven to 450°F. Place Dutch oven in the oven to preheat for 30 minutes.

      So yes, preheat the oven to 450F (I mistyped :/ the first time) and place the Dutch oven in the oven to warm it up for 30 minutes.

  2. If my husband is specifically allergic to Tapioca start he found in most gluten free baking mixes and flours is there a different gluten free choice of flour that you would recommend?

    1. Hi Jessica! That’s a great question. Unfortunately, I am not familiar with a commercially made flour that does not use tapioca flour. It’s commonly added to help gluten-free products brown. I haven’t tried it without the tapioca starch, but I have made and used Minimalist Baker’s DIY Gluten Free Flour. I would suggest trying to replace the tapioca starch with extra potato starch. It might not brown as much as the original version, but the flour should have similar properties. Let us know if you give it try. 🙂 Thanks for your question!
